Fresh Corn Cowboy Caviar: The Summer Corn Salsa You’ll Make on Repeat

When life gives you corn, make Cowboy Caviar!

There are plenty of versions of Cowboy Caviar, also known as corn salsa, but my favorite way to make it is to let fresh summer corn be the star.

I use five ears of fresh corn, cutting the kernels right off the cob, and combine them with juicy cherry tomatoes, black beans, black-eyed peas, jalapeño, red onion, and fresh parsley. Everything gets tossed with fresh lime juice and avocado oil for a simple dressing that lets all those fresh flavors shine.

It's crunchy, colorful, a little spicy, and so easy to make.

Why I Love Fresh Cowboy Caviar Corn Salsa

Fresh corn is one of my favorite things about summer, and this is such a simple way to put it to good use.

I especially love using corn cut straight from the cob because the kernels are sweet, juicy, and have that fresh crunch you just don't get from canned corn.

The rest of the ingredients complement the corn without overpowering it. Cherry tomatoes add a little sweetness, black beans and black-eyed peas make it hearty, while jalapeño and red onion give it just enough bite.

And the dressing? Just fresh lime juice and avocado oil, plus salt and pepper to taste. Sometimes simple really is best.

More Than Just a Dip

While Cowboy Caviar is perfect served with tortilla chips, I don't think you need to wait for a party to make it.

This is one of those recipes that works just as well for an everyday meal as it does for a summer gathering.

Serve it as a side dish alongside grilled chicken, burgers, steak, or fish. Spoon it over grilled chicken for an easy dinner, or use it as a fresh topping for tacos.

And if you're having friends or family over, put out a big bowl with tortilla chips and you've got an easy appetizer that requires very little work.

It's also a great dish to bring to a summer barbecue, picnic, or potluck. It's colorful, fresh, and can be made ahead of time.

Let the Flavors Come Together

You can eat this corn salsa right after making it, but I like to let it chill in the refrigerator for about 30 minutes before serving.

That little bit of time allows the lime juice, jalapeño, red onion, and parsley to mingle with the corn, tomatoes, and beans.

Before serving, give it a quick taste. Depending on how sweet your corn and tomatoes are, you may want to add a little more lime juice, salt, or pepper.

What to Do With the Leftover Beans

Since we're only using half a can of black beans and half a can of black-eyed peas, you'll have some leftovers.

Save them!

I like to store the remaining beans in the refrigerator and use them later in a soup, chili, salad, or another recipe. It's a simple way to avoid wasting food and makes getting dinner on the table another day just a little easier.

A Simple Way to Enjoy Summer Corn

This Fresh Corn Cowboy Caviar is one of those recipes I come back to when fresh corn is plentiful. It's easy enough for a weeknight, but special enough to put on the table when you're entertaining.

Serve it with chips, pile it onto grilled chicken, or enjoy it as a fresh summer side.

However you serve it, just make sure you get plenty of that sweet corn in every bite.
